Meatloaf Cupcakes

Ingredients:
For the meat:
500 g minced meat
1 onion, fried (red, white or yellow)
2 small carrots, grated
2 eggs
1/4 cup Parmesan cheese
1. . Oven and pan preparation:
Preheat your oven to 180°C.
Spray an 8-hole muffin pan with nonstick cooking spray to prevent sticking.
Mixing the meat Ingredients:
Place the onion and carrots in a large bowl.
Add minced meat, egg, Parmesan cheese, tomato ketchup, breadcrumbs, garlic powder, dried thyme, dried thyme, salt and pepper.
Use your hands to mix the spices until well mixed.
Form and cook the meatballs: Take 1/2 cup of the
Meatball mixture and form it into a tight ball with your hands. Press it into the hole prepared in the box. Place it on top to create a small dome.
Repeat with remaining meat mixture. You should be able to prepare up to 8 glasses.
Bake in preheated oven for 20-25 minutes or until cooked through. Remove from oven.
Prepare the baked potatoes:
While the ground beef is cooking, boil or steam the baked potatoes until soft but not soggy.
Drain the potatoes and add the butter and 1/2 of the milk. Mash with a potato masher until smooth; add milk if necessary to achieve a smooth but thick consistency.

Assembling the cups:
Spread a dollop of tomato ketchup on each cup of meat.
There are fries on top. You can scoop the baked potatoes with a ladle or spoon to make them look more beautiful.
Sprinkle with chopped parsley to garnish.
